Its that time of the year when its really heating up, and summer fruits are in abundance from Papayas and mangoes, guavas, soursop and more.
Today I will be featuring one of my most favorite summer fruit papaya. If you love Papaya like I do you might have tried using it in a lot of ways, I have used papayas in salads, on the grill in chutneys and also as a vegetable where I boil it when its still green, Today I am featuring my latest recipe for Papaya Lime Ice Tea slush. You can begin making the recipe by preparing some of the ingredients over night example the ice tea can be made and leave in the referagator until you are ready to make the recipe. Also the syrup can be made days in advance. Try it and Let me know what you think.
Fifi’s “Cooking in paradise” Papaya Lime Ice Tea Slush.
1 Large ripe Papaya
4 cups water
4 large ice tea tea bags
3 ounces dark or light rum
2 Tablesppon freshly squeezed lime juice
1 1/2 cup fine granulated sugar plus 1/4 water ( Make into a sugar syrup
2 Cups of ice cubes ( optional)
Wash and peel the papaya or cut in chunks and remove the pulp from the seeds, Puree the Papaya Chunks in a blender or food processor. chill
Bring water to a boil in a sauce pan add tea bags and 1/4 in grated ginger remove pan from heat cover sauce pan and let tea stand for 30 minutes to steep. remove tea bags strain tea then cool.
In the Blender, add the ice, rum, syrup, lime juice and Papaya blend until slush is fully combined serve with lemon or lime wedges enjoy.
Tea can also be made without mixing in a blender just add all the ingrededients with the exception of the ice and serve in tall glasses with ice cubes and lemon or lime wedges
